Title: Lomi Lomi Salmon Phillipe Padovani, Exec Chef, Manele Bay

Yield: 4 Servings

8ozFresh salmon, salted
2lbTomatoes, finely chopped
8ozOnions, finely chopped
1/3 Green onions, finely
  Chopped
1/2cChopped ice

Remove the salmon skin and cut into small dice. Place into a bowl and add tomatoes and onions and chill. To serve place bowl on crushed ice.

Note: Lomi in Hawaiian means "to squeeze, crush, mash fine."
